A delicious and rich fruit cake for rum and fruit lovers. This traditional Jamaican Black cake is baked with fruits; aged In white rum, red wine and fruit brandy for over a year. The fruits are then blended to a smooth paste, added to a blend of cinnamon, nutmeg, allspice and sifted flour. This rich spice cake, filled with drunken dried fruits gets its name from the addition of burnt sugar – known as browning – added just before the cake goes in the oven, giving it the distinctive rich dark color.
